Swiv, Battle Squadron and Silk worm are all favs of mine. :)

R-type's also a pretty decent arcade conversion but I allways found it rock hard to play.

My favorites are

Xenon + Xenon 2 mainly because they are tough but have that one more go addictive quality.

Goldrunner but maybe a little to tough, the music makes up for it though!

I'll second Xenon II.  With a full weapons kit and the Bomb the Bass theme banging away it really is a shmup fest.  Very few shooters get this crazy.

on the Amiga, maybe...  but if you've tried the Japanese shooters, then... uhmn, eep!

Deluxe Galaga is excellent.

Personal faves other than that include Apidya, Project-X Special Edition (Not the original.  It's far too difficult and unforgiving), SWIV and Banshee.  Oh and a special mention for Plutos which is very under-appreciated in my opinion.

It's Brutal, and Inexcusable!

TCD

Hybris and Battle Squadron for vertical.
Apidya and Project X for horizontal.
There, finally some decent shoot 'em ups in this thread :P ;)
Hypothesis: Current scientific thought suggests we have already achieved max rocking level.

Perhaps max-rocking levels could be radically increased with creation of 30ft tall motion controlled guitar thrashing robot simulacrum.

Result: We rocked the f*ck out.
